Italian Turkey & Tortellini Soup: Date Added: 30 Jul 2011

4 Cups TURKEY BROTH or canned low-sodium chicken broth
1 Cup sliced baby carrots
1/2 Cup diced celery
1 (14.5-Ounce) can diced tomatoes with Italian seasonings
1-1/2 Cups COOKED TURKEY, diced
1 Teaspoon minced fresh garlic
1 Teaspoon dried Italian seasoning blend
1/2 Teaspoon black pepper
1 Cup fresh spinach leaves, washed and drained
1/2 Cup cheese tortellini
1/4 cup grated Parmesan cheese

Cooking Instructions

Yield: 4

1. In a medium saucepan, over medium heat, bring broth, carrots and celery to a gentle simmer. Simmer for 5 minutes.
2. Stir in tomatoes, cooked turkey, garlic, seasoning blend, pepper and spinach. Reduce heat and simmer gently for 2 to 4 minutes.
3. Stir in tortellini and cook until pasta is done. Serve immediately.
4. Garnish each serving with Parmesan
